    Äpfel im Winterschlaf

    Warum können Sie bei uns bis zum Sommer knackige Äpfel kaufen?

    Äpfel werden in Frühsorten, Herbstsorten und Lagersorten unterschieden.

    Frühsorten ab Mitte Juli geerntet sind für den sofortigen Verbrauch bestimmt.

    Herbstsorten lassen sich bis Febr./März lagern.

    Lagersorten bleiben unter den richtigen Voraussetzungen bis zum Sommer knackig.

    Für die Lagerung werden die entsprechenden Sorten zum richtigen Zeitpunkt geerntet, d.h.  Festigkeit und Zuckergehalt müssen optimal sein. Direkt nach der Ernte werden die Äpfel möglichst schnell in unseren Speziallagern eingelagert. Der Prozess des Weiterreifens soll zeitnah gestoppt werden. Äpfel benötigen zum Lagern eine hohe Luftfeuchtigkeit und eine Temperatur von 1-4°C je nach Sorte. Der Sauerstoffgehalt wird zusätzlich abgesenkt, um den Stoffwechsel zu verlangsamen. Diese neue Atmosphäre in den Lagern muss täglich kontrolliert werden.  Die Äpfel verbringen nun eine Art Winterschlaf. Sie kennen das sicherlich von den verschiedensten Tieren, die im Winter auch einen Winterschlaf mit reduziertem Stoffwechsel halten. Durch die Verlangsamung des Stoffwechsels verlangsamt sich zusätzlich der Vitamin-Abbau und die Äpfel bleiben frisch.

    Diese sogenannten ULO-Lager werden alle 3-4 Wochen geöffnet. Wir können dann verschiedene Sorten wie frisch geerntet entnehmen. Äpfel sind Lebewesen und atmen. Sauerstoff haben sie nach der Lagerung wieder ausreichend zur Verfügung. Das führt dazu, dass der Stoffwechsel „explodiert“ und die Weiterreifung jetzt schneller erfolgt, als direkt nach der Ernte. Das ist auch der Grund, warum wir direkt nach der Lageröffnung die härtesten Äpfel anbieten können. Nach ca. vier Wochen-je nach Sorte-die Festigkeit aber etwas nach lässt. Zusätzlich haben wir nicht immer alle Sorten im Verkauf. Lücken können sich ergeben bevor, wieder ein Lager geöffnet wird. Wir möchten Ihnen möglichst immer knackige Äpfel anbieten. Das geht nur, wenn wir erst ein Lager komplett verkaufen, bevor wir wieder ein neues aufmachen.

    Sie können die Äpfel nach dem Einkauf am besten im Kühlschrank lagern. Die Lagerung sollte im Folienbeutel im Gemüsefach erfolgen. Das ist die beste Lagerbedingung, es ist kalt und die Folie verhindert das Austrocknen der Früchte. Heute sind die Keller mit über 10°C und trockener Luft für die Lagerung ungeeignet. Die Lagerung bei Zimmertemperatur führt zu einem schnellen Festigkeitsverlust.
